That looks awesome! Definitely captures the feel of them.
Just FYI - you might want to have a look at how CoS handles the Frost Giant faction for the scaling thing. Frost giants are larger in tactical in that mod as well, but you can still see them normally (vs. zoom-in of torso) in the unit equipping screens, etc.
Always love to see anything related to Lords of Magic. The more, the better.
I wish you well in your work, and will be up to check out the results, even though I never played in any StarDock game except Galactic Civilizations (I loved it actually).
I expected the 3D graphic changes too, but we can always dream.

Also, why don't you use rotating images when making scrolls/recipes?
Even MS Paint can be capable of that in some ways, with some pixel art I did not do on this example

The scroll with the Rocca's Chalice looks acceptably good, the angles are close to perfect both horizontal and vertical, although I must say that the chalice is blurry. Perhaps Photoshop is not the right way to do that in that resolution, the picture should be enlarged considerably in Paint first, like 800% or more.The other solution will be smart sharpening the existing small picture, but I guess it will be harder.
Speaking of angles, I'd prefer to tilt horizontally to -30 degrees and vertically to 8 degrees in MS Paint.
Speaking of alternatives, I managed to do this by my humble pixel art skills. The image for sure can and should be upgraded further, posting it here just to show the capabilities of MS Paint. (:

Speaking about the scrolls - looks cool, now they are not blurry. However, I still think you should choose the level of rotating more carefully, but it's certainly the way to go. Nice work!
(If it is possible, it would be better to make the inner image borders parallel to the upper and lower borders of the scroll, to make them looking fitting into. Never tried rotating something in IrfanView unfortunately)
I've got Win XP, so lol. However, I think your MS Paint is also capable of doing that, this option is just hidden well.
You're showing great successes. I'd take the middle between the two (preferrable, the lower border for the second one is perfect, but the upper one tends right too much), or even chose the second variant but shaded the top of the chalice image a bit, if it's not possible to raise the top-right angle of the picture.
Could not resist and darkened a few pixels on the top border. Took a few seconds Perhaps I can assist you with scrolls, doing the same job to save your time with your already created formula for the second scroll.
The "After" scroll looks better.
However, unless you're a graphics kind of person, it might be good to get the mechanics down first with "rough draft" graphics, and then polish them as time allows. You can spend an infinite amount of time making pixel graphics "better".
Also - for a free "better version of paint", I highly recommend Paint.Net (http://www.getpaint.net/)
It won't do everything that Photoshop/Gimp can do, but the learning curve is a lot less steep (and it's a lot less resource intensive, for lower end machines.)
If they will be done like your After Scroll , it will take a few seconds for each to fix. Otherwise pixel art won't be of much help I'm afraid - it will be time-consuming.

I would also recommend these templates for the scrolls of each faith. They contain no thrash.
WOW! I am totally in love with that Fafnir! Is it an in-game model you've customized so far? Pretty recognizable.
You can also use the in-game portraits for every creature, if possible - it would be cool and keep the style. Even the colorized ones are available for Chaos, Life and a bit of Fire portraits. Unfortunately the colorized portrait pack was not ever finished, though.
It's also very cool to see all those spell icons you use.
