I'm just wondering if it's worth my time to build more than what's needed to have all research options. I've always thought that it speeds up research time but I've never known for sure.
It doesn't speed up research times, it's just a safety net - you need to maintain the proper number of labs to be able to build the researched buildings/units. If you have more than necessary, it'll take a few more to be destroyed before you lose the ability to build the researched hulls.
afaik it does nothing, but in large maps i make 1-2 extra of each to not loose bonuses due to raids.
