I'm a beginner at SOSE. I like the game but the learning curve is a bit steep.
1) How do you get your first Capital Ship. It seems that the option to build one is always greyed out.
2) Once you destroy all of a planets defences, how to you colonise the planet? Which ship does that?

1. Your first cap is free, so all you need to do is making sure the fleet limit has 50 left. You build your capital ship factory and then pick one...if you have the factory but it won't let you build, it should have a little sign at the bottom of each captial ship picture to explain why you can't build it.
2. You have to bombard the planet until its neutral, once its neutral you can buy a colony frigate or one out of the five capital ships has a colonize ability, so either one of those can work.

The first move you should make in any game is to build that capital ship factory. Also your first capital ship should be a mothership--the one that colonizes. (The exception to that rule is that if you are playing TEC you might want to consider buildng a different capital ship since the TEC's mothership, the Akkan, sucks--in that case you'd want to build a colonizing frigate too in addition to your first capital ship.)
It's not quite as black and white as to the capital ship choice in SP games as Jixra makes it out to be Colonizing capitals make it easier to expand faster, but that also mean they make it tougher for new players learning how to juggle between planet upgrades and building ships in the beginning, and make it easy to over-expand early and not be able to defend or worse yet, not having any money income.
In any case, with Easy/Medium AIs (what a beginner should be attempting to play against ) speed of expansion is far from very important, so I would actually recommend ships with more combat punch: Marza or Kol for the TEC, Vulkoras for the Vasari (not a huge fan of the Kortul by comparison, but it's good too as long as it has antimatter), Radiance for Advent.
I think Advent's Progenitor mothership is the only colonizer that's all around great to have in a combat fleet, due to its shield regen. The Akkan does help with range, and the space whale is good against single ships with its armor/DoT ability, but the Progenitor keeps a big group of ships alive for a long time.
Most of it boils down to preference, but I'll admit playing against lots of Unfairs, I go with a colony capital first.
same here, I always get the Cap ship with Colonize before any others. The mini colonizing ship is entirely to slow for planet colonization so I only use them for taking over rogue metal/crystal mines
Noobies just have to take their lumps, but they'll figure out how to expand properly eventually, and if they can't expand properly then a "fighting" capital ship isn't going to help them.
I suppose that might work for games against the AI but when they come online they'll discover that their "fighting" capital ship will get blown up when the opposing players focus fire on it and that capital ships are not fighting ships.
When I first started playing I tried the colonizing Cap since that was what everyone was saying to do on the forums months back. I took more lumps with that ship than I did with the Kol, Kortul, or Radiance. Again as Annatar says, is all has to do with player preference. Granted I don't play online, I always start with one of the three I mentioned and then after the first 2 or 3 planets have been taken I have the resources to build my Colonizer Cap. My colonizer frigate is then tasked with getting the neutral factories or it is scuttled.
