I have heard that Start11 has been updated to version 2, but can't really find any information about this one specific thing. I prefer to have my taskbar along the left-hand side of the screen to save on screen real estate. I know this feature was not in Start11 v1, hence why I ended up abandoning that software. Is this a feature in v2, or one that we can expect at some point in the future?
I seem to recall seeing that this is not possible.

It depends on what OS you are using, Windows 10, yes, but not using Windows 11.
Just to clarify,
If you are on Windows 10, the OS supports bottom, left, top, and right taskbars. It is not a function of Start11. However, if you use the enhanced taskbar of Start11, it does not support left or right taskbars, but does support top and bottom taskbars.
If you are on Windows 11, the OS only supports bottom taskbars. The Start11 enhanced taskbar supports top and bottom taskbars.
So the answer is yes to left taskbar if you are on Windows 10, and no if you are on Windows 11.
What did you end up doing rather then use start 11. Vanilla Windows 11? If not, Start 11 v2 has actually improved on its ability to work with other 3rd party software.
Yeah, I'm on Windows 11. I was hoping that Start11's enhanced taskbar would let me put it on the left of the screen. Very sad that it does not. I may end up just using StartAllBack, or simply just using the default Windows taskbar. For clarity, I'm not even interested in a Start Menu replacement, I actually like the Win 11 Start Menu (apart from the recommended section lol) and am simply looking for a way to move my taskbar!
Something that has flown under the radar is that start 11 v2 now has the ability to work with StartAllBack. So that would be an option to get the taskbar on the left. Explorerpatcher also works. Of course with those two programs you do have to worry about windows updates breaking them.
Start 11 v2 also has a Windows 11 style menu that takes out that annoying recommend section and even gives the native looking menu enhancements such as pages and tabs. It may be worth a look since there is a free 30 day trial.
