One of my favorite things to do in the original Star Control was to start a game with two computer players and just watch. A typical game didn't last more than about half an hour so it was a good way to kill a little time.
Is making this an option in Origins on the roadmap?

I agree, this was a feature I used to learn how the Computer played the Computer in the 3DO version.
In a way i feel like having this feature is cheating, i figured out the strong and weak points of each ship by myself and found the trial and error part in getting the best tactics with each ship to be enjoyable.
Though i'll likely never use it, i wouldn't say no to not having it, i'd probably not use it but it's nice to know that it is there, should one really get stuck and not figure out a certain ship's potential.
Having a "Zero Player" option is on the roadmap albeit for internal testing/benchmarking reasons. Its something we may consider opening up to players as well as kinda a spectator mode.
I also want to say I enjoyed watching AI-vs-AI a lot in SC2 to learn new things about each ship. Also, the AI for SC2 was incredibly well done and I hope to see that level of work in SC:O as well.
The current plan is to support AI vs. AI battles because not everyone is going to want to fight the battles out in the adventure mode.
